Big Game Cheesy Chorizo Nachos

What You Need

1 tablespoon vegetable oil
3 garlic cloves, minced
1/2 onion, diced
1/2 pound fresh chorizo, casings removed
2 avocados, halved lengthwise, pitted, flesh scooped out
2 pickled Serranos pepper, 1 diced and 1 sliced
juice of 1 lime
salt
7 ounces tortilla chips
1/2 pound Manchego cheese, shredded
simple guacamole

Step By Step

1️⃣ Heat the base
Warm vegetable oil in a skillet over medium heat. Add 2 cloves diced garlic + onion. Cook until soft, fragrant, and just translucent.

2️⃣ Build the flavor
Add chorizo, breaking it up as it browns. Let it render, crisp, and deepen in color. This is your foundation.

3️⃣ Make the guac
In a separate bowl, mash avocados with remaining garlic clove, diced serranos, lime juice, and salt. Keep it chunky. Set aside.

4️⃣ Prep the heat
