Charred Summer Corn, Peach & Skirt Steak Salad

What' You’ll Need

Steak

  1. 2 lb skirt steak

  2. Juice of 1 large orange

  3. Juice of 2 limes

  4. 1/4 cup extra virgin olive oil

  5. 5 cloves garlic, grated

  6. 1/3 cup fresh cilantro

  7. 1 1/2 tsp kosher salt

  8. 1/2 tsp coarse black pepper

    Summer Corn + Peach Salad

  9. 3 ripe but firm peaches, halved

  10. 3 ears corn

  11. 1 English cucumber, sliced into half moons

  12. 1 large avocado, cubed

  13. 8 oz mozzarella pearls

  14. 1/4 medium red onion, thinly sliced

  15. Crumbled cotija, for finishing

  16. Chopped cilantro, for finishing

  17. Olive oil, for grilling

    Lemon-Serrano Vinaigrette

  18. 1/3 cup extra virgin olive oil

  19. Juice of 1 large lemon

  20. 1 small serrano, finely minced

  21. 1 small garlic clove, grated

  22. 1 tsp honey

  23. 1/4 tsp coarse black pepper

  24. Kosher salt, to taste

    Grilled Bread

  25. Sliced French bread

  26. Extra virgin olive oil

  27. Flaked sea salt

  28. Chopped cilantro

Step By Step

1️⃣ Marinate The Steak
  1. Combine the skirt steak with orange juice, lime juice, olive oil, garlic, cilantro, salt and pepper. Cover and refrigerate for 2–4 hours, or at least 30 minutes.

2️⃣ Take The Bite Out Of The Onion
  1. Soak the sliced red onion in ice water for 5 minutes. Drain and pat dry.

3️⃣ Make The Vinaigrette
  1. Whisk together the olive oil, lemon juice, serrano, garlic, honey and black pepper. Season with kosher salt to taste.

4️⃣ Give The Corn Some Fire
  1. Preheat the grill over high heat.

  2. Brush the peach halves with olive oil and grill cut-side down for 1–2 minutes, until charred but still firm. Let cool, then cube.

  3. Coat the corn with olive oil and grill, turning occasionally, until charred and tender. Cool slightly, then slice the kernels from the cobs.

  4. Drizzle the bread with olive oil and grill until toasted and charred on both sides. Finish with flaked sea salt and cilantro.

5️⃣ Grill The Steak
  1. Remove the steak from the marinade, let the excess drip away and pat the surface dry.

  2. Grill over high heat until deeply seared and cooked to your preferred doneness. Rest for 5–10 minutes, then slice against the grain.

6️⃣ Bring Summer Together
  1. Combine the peaches, charred corn, cucumber and red onion. Toss with the lemon-serrano vinaigrette.

  2. Gently fold in the avocado and mozzarella.

  3. Transfer to a platter, finish with cotija and cilantro, and serve with the sliced skirt steak and grilled bread.

thebacklabel Take: If August had a dinner-party salad, this would be it. Sweet corn, juicy peaches, acid, chile and grill char do most of the heavy lifting; the steak simply makes sure nobody leaves hungry.
