We’re giving corn the whole week.

Welcome to Summer Corn—five days of recipes built around one of August’s best ingredients, from smoky and savory to the kind of sweet corn situation that barely needs convincing.

First up: a skillet that knows exactly what late summer wants. Sweet corn gets charred until golden, then folded into a creamy chipotle sauce with plump shrimp, garlic, lime, and plenty of cilantro.

It’s smoky, a little spicy, and on the table in about 20 minutes.

Creamy Chipotle Shrimp & Corn Skillet

Ingredients

  1. 1½ lb large shrimp, peeled and deveined

  2. 3 cups corn kernels, fresh or frozen

  3. 1 cup heavy cream, or coconut milk for dairy-free

  4. 2 tbsp tomato paste

  5. 1–2 chipotle peppers in adobo sauce, minced

  6. 1 tsp smoked paprika

  7. 1 tsp cumin

  8. 3 cloves garlic, minced

  9. ½ cup chicken broth

  10. Fresh cilantro, for garnish

  11. Lime wedges, for serving

  12. Salt and pepper, to taste

Step By Step

1️⃣ Season The Shrimp
  1. Season the shrimp with salt, pepper, and smoked paprika.

2️⃣ Sear Until Pink
  1. Heat a large skillet over medium-high heat. Sear the shrimp for about 2 minutes per side, until pink and just cooked through. Transfer to a plate.

3️⃣ Char The Corn
  1. In the same skillet, add a splash of oil. Add the corn and garlic and cook for about 5 minutes, until the kernels are tender with a little golden char.

4️⃣ Build The Chipotle Base
  1. Stir in the tomato paste, minced chipotle peppers, cumin, and chicken broth. Let everything simmer together for about 2 minutes.

5️⃣ Make It Creamy
  1. Reduce the heat to low and stir in the heavy cream until the sauce is smooth and velvety.

6️⃣ Bring Back The Shrimp
  1. Return the shrimp to the skillet and spoon the sauce over the top. Cook for another 2 minutes, just until everything is heated through.

7️⃣ Finish Bright
  1. Scatter generously with fresh cilantro and serve with lime wedges for squeezing over the skillet.

Serve it straight from the pan with warm tortillas—or just bring the skillet to the table and let everyone fend for themselves.
