Our celebration of the great American pool party continues, and today we're bringing a side dish to the table.
We love ribs. Baby backs. Spare ribs. Beef ribs. If it can be slow-cooked, smoked, or slathered in sauce, we're interested.
But today, we're making corn ribs.
A corn rib is a quartered corn cob roasted until it curls into a handheld, rib-like shape that's perfect for dipping, sharing, and inevitably reaching for seconds.
This version leans smoky and savory, with roasted corn finished with lime, Parmesan, and chives, then served alongside a creamy sriracha dipping sauce. It's the kind of side dish that starts as an accompaniment and somehow ends up stealing the spotlight.

BBQ Corn Ribs

🏖️☀️ Fun Fact: The American pool party took off in the 1950s, when backyard pools became suburban status symbols and summer entertaining moved outdoors.
Ingredients
3 corn on the cobs, cut into quarters
4 tbsp extra virgin olive oil
1 tsp smoked paprika
3 tsp BBQ seasoning @fortnums
1 lime
2-3 tbsp parmesan
2 tbsp chives, finely chopped
The Sauce
1 1/2 tbsp Greek yoghurt
1 tbsp mayonnaise
1 tbsp sriracha
1/2 tbsp lime juice
Step By Step
1️⃣ Build The Foundation
Line the bottom of a 9 x 13-inch dish with a full layer of cookies. No gaps. This is the architecture of dessert.
2️⃣ Add The Bananas
Arrange sliced bananas evenly over the cookies, creating a generous layer in every corner.
3️⃣ Make The Pudding
Whisk together the milk and pudding mix for about 1 minute. It will begin to thicken almost immediately.
4️⃣ Create The Cream Layer
In a separate bowl, beat the cream cheese and sweetened condensed milk until completely smooth. Fold in the Cool Whip, then combine with the pudding mixture until silky and uniform.
5️⃣ Assemble The Layers
Pour the pudding mixture over the cookies and bananas, spreading it evenly from edge to edge.
6️⃣ Finish Strong
Top with a final layer of cookies, covering the surface from corner to corner.
7️⃣ Let Time Do The Work
Refrigerate for at least 4 hours before serving. Overnight is even better, allowing the cookies to soften and the layers to settle into something greater than the sum of their parts.
