🔪 Fall Kitchen Upgrade #2: Misen 6" Bunka Knife
There are knives you own, and then there’s the knife you automatically reach for.
The Misen Bunka has all the makings of the latter.
A bunka is a Japanese-style all-purpose knife, and this one sits in a particularly useful sweet spot: a compact 6-inch blade, a flatter cutting edge, and that distinctive pointed tip.
Translation? It can handle most of what happens on a normal cutting board without feeling like you brought out a sword to dice an onion.
Why We Like It
It’s incredibly nimble.
At just under six inches, the blade feels controlled in your hand. Chopping herbs, dicing shallots, working through vegetables, trimming a piece of chicken—you’re close to the food instead of wrestling with an oversized blade.
That tip is more useful than it looks.
The triangular point gives you the precision of a much smaller knife when you need it: mincing garlic, trimming fat, scoring, or getting into tight corners.

Misen uses AICHI ACUTO440 Japanese steel with a fine 14-degree-per-side edge. It’s designed to hold that edge through regular kitchen use while also being highly rust resistant.
