Ingredients

For the Beef Kebabs
2 lb ground beef
1 small white onion, grated
3 garlic cloves, grated
1/4 cup chopped fresh dill
1/4 cup chopped fresh parsley
Zest of 1/2 lemon
1 tbsp ground cumin
1 tbsp smoked paprika
1 tsp ground coriander
1/4 tsp ground cinnamon
Salt, to taste
Freshly ground black pepper, to taste

For the Yogurt Sauce
3/4 cup Greek yogurt
Juice of 1/2 lemon
1 1/2 tbsp olive oil
1 tsp date syrup
Salt, to taste
Freshly ground black pepper, to taste
Chopped fresh parsley, to taste
Chopped fresh dill, to taste

For Serving
Warm tortillas or flatbreads
Shredded lettuce
Thinly sliced onion

Step By Step

1️⃣ Mix The Beef
Add the ground beef, grated onion, garlic, dill, parsley, lemon zest, cumin, smoked paprika, coriander, cinnamon, salt, and black pepper to a large bowl. Mix thoroughly with your hands until the seasonings are evenly distributed.

2️⃣ Shape The Kebabs
Divide the mixture into 4 to 6 equal portions. Press each portion firmly and evenly around a metal skewer, shaping it into a long kebab.

3️⃣ Grill Until Charred
Preheat the grill over medium-high heat. Grill the kebabs, turning as needed, until deeply charred on every side and cooked through.

4️⃣ Make The Yogurt Sauce
Add the Greek yogurt, lemon juice, olive oil, date syrup, salt, black pepper, parsley, and dill to a bowl. Stir until smooth and evenly combined. Taste and adjust the seasoning.

5️⃣ Build The Wraps
Layer lettuce and sliced onion onto a warm tortilla or flatbread. Add a grilled beef kebab, spoon over the yogurt sauce, and serve immediately.
