Ingredients

Skewers
  1. 1 1/2 lb beef, moose or venison, cut into bite-size pieces

  2. 2 large onions, cut into bite-size pieces

  3. 2 bell peppers, cut into bite-size pieces

  4. 1/2 pineapple, cored and cut into bite-size pieces

Marinade
  1. 1/3 cup BBQ sauce

  2. 1/4 cup soy sauce

  3. 1/3 cup honey

  4. Juice of 1 lime

  5. 2 garlic cloves, minced

  6. 1 tbsp ginger

  7. 1 tbsp sriracha

  8. Salt and black pepper, to taste

Step By Step

1️⃣ Build The Marinade
  1. Combine the BBQ sauce, soy sauce, honey, lime juice, garlic, ginger and sriracha. Season with salt and black pepper.

2️⃣ Give The Steak A Head Start
  1. Add the steak to the marinade and refrigerate for at least 30 minutes.

3️⃣ Load The Skewers
  1. Thread the marinated meat, onion, bell pepper and pineapple onto skewers, alternating everything as you go.

4️⃣ Get The Grill Hot
  1. Preheat the grill to about 400°F.

5️⃣ Grill + Turn
  1. Place the skewers on the grill and cook for about 12–15 minutes, turning every 3–4 minutes so everything gets evenly charred.

6️⃣ Baste At The Finish
  1. During the final 3–4 minutes, brush the skewers with extra marinade. Continue cooking until the meat reaches your preferred doneness and the vegetables are nicely charred.

7️⃣ Serve It Up
  1. Pull the skewers from the grill and serve straight up or over cilantro-lime rice.

thebacklabel Take: This is why dinner on a stick works. Sweet pineapple gets smoky at the edges, the honey-BBQ marinade turns glossy over the fire, and peppers and onions catch enough char to keep the whole thing from leaning too sweet. Fifteen minutes over the grill and dinner has officially left the kitchen.
