Ingredients

Dumplings⁣
1 lb ground chicken⁣
4 green onions, sliced thin⁣
1 tb fresh grated ginger⁣
3 cloves garlic, minced⁣
1 tbsp sesame oil⁣
3 tb dark soy sauce (or low sodium soy sauce)⁣
1/2 tsp white pepper (or ground black pepper)⁣
1/2 tsp kosher salt⁣
1 package wonton wrappers⁣

Dipping sauce⁣
1/2 cup low sodium soy sauce⁣
2 1/2 tbsp rice wine vinegar⁣
1 tbsp sesame oil⁣
2 cloves garlic, minced
2 tsp grated/minced ginger ⁣
1 tb sriracha sauce⁣
2 sesame seeds⁣
1 green onion, sliced (optional)⁣

Optional garnishes: furikake seasoning & chili oil⁣

Step By Step

1️⃣ Build the flavor base
In a bowl, combine ground chicken, green onion, ginger, garlic, sesame oil, soy sauce, salt, and pepper. Mix until smooth, sticky, and fully integrated. This is your foundation.

2️⃣ Heat the stage
Lightly spray a nonstick skillet with avocado oil and bring it to medium heat. You want a gentle sizzle, not a full-on smoke show.

3️⃣ Portion like a pro
Using a cookie scoop, drop evenly sized chicken balls straight into the pan. Clean, consistent, efficient.

4️⃣ Let them set
Leave untouched for 2 minutes. No stirring, no shaking. Let that base develop structure and a little color.

5️⃣ Wrap it up
Top each chicken ball with a wonton wrapper. Gently pinch and shape the edges around the filling so it hugs tight.

Lightly spray the tops with avocado oil. Add ⅓ cup water around the pan edges and cover immediately. Let it steam until the water evaporates.

7️⃣ Repeat for tenderness
Add another ⅓ cup water, cover again, and let it go until the chicken is fully cooked and the wrappers are tender but structured.

8️⃣ Plate + dip
Serve hot with your favorite dipping sauce. Think soy, chili crisp, maybe a little rice vinegar situation.
