Ingredients

For the Pineapple Bacon Jam
  1. 1 lb thick-cut bacon, diced

  2. 1 cup fresh pineapple, finely chopped

  3. 1 large yellow onion, thinly sliced

  4. 3 cloves garlic, minced

  5. 1/4 cup brown sugar

  6. 1/4 cup apple cider vinegar

  7. 2 tbsp soy sauce

  8. 1 tbsp Dijon mustard

  9. 1 tsp smoked paprika

  10. 1/2 tsp red pepper flakes, optional

For the Hotdogs
  1. 6 beef hot dogs

  2. 6 brioche or potato buns

  3. 2 tbsp butter, for toasting

  4. Fresh jalapeño slices, optional

  5. Fresh cilantro or green onions, chopped, optional

Step By Step

1️⃣ Crisp The Bacon
  1. Cook the diced bacon in a large skillet over medium heat until crisp, about 8–10 minutes. Transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of rendered fat in the skillet.

2️⃣ Caramelize The Onions
  1. Lower the heat to medium-low, add the sliced onion, and cook for 8–10 minutes, stirring occasionally, until soft and deeply golden.

3️⃣ Add The Garlic
  1. Stir in the minced garlic and cook for about 1 minute, just until fragrant.

4️⃣ Build The Jam
  1. Add the pineapple, brown sugar, apple cider vinegar, soy sauce, Dijon, smoked paprika, and red pepper flakes, if using. Stir everything together and bring the heat back to medium.

5️⃣ Let It Get Jammy
  1. Simmer for 10–12 minutes, stirring occasionally, until the mixture has reduced and thickened enough to coat a spoon.

6️⃣ Bring Back The Bacon
  1. Fold the crispy bacon back into the skillet. Keep the jam warm over low heat and taste for balance—more vinegar for tang, brown sugar for sweetness, or red pepper flakes for heat.

7️⃣ Grill The Dogs
  1. Heat the grill to about 400–450°F. Grill the hot dogs for 5–7 minutes, turning every few minutes, until browned and lightly charred.

8️⃣ Toast The Buns
  1. Butter the cut sides of the buns and toast them on the grill for 1–2 minutes, until golden.

9️⃣ Load Them Up
  1. Nestle each hot dog into a toasted bun and spoon the warm pineapple bacon jam generously over the top. Finish with jalapeño, cilantro, or green onion if you want a little freshness and heat. Serve immediately. Preferably outside. Summer still has a few dinners left in her.
