First, we practically proposed when Marry Me Chicken Tortellini landed in your inbox. Then we went full one-pot mode with a dynamite Coconut Lime situation.
Today? We’re hitting the pool.
August Sundays are for squeezing every last hour out of summer: towels everywhere, sunscreen still on your shoulders, and absolutely no interest in coming home to start dinner from scratch.
This is exactly the kind of recipe we want waiting for us.
Load a chuck roast into the slow cooker with Italian seasoning, garlic, banana peppers, and beef broth, then les time do the heavy lifting. As the the pool day winds down, the beef is ready to shred, pile onto hoagie rolls, blanket with provolone, and broil until bubbly and browned.
Low effort. Big payoff. Very Sunday.

Slow Cooker Italian Hoagie Sandwiches
Ingredients
For the Hoagies
1 chuck roast
2 tbsp Italian seasoning
1 tsp onion powder
1 tsp garlic powder
1 tsp minced garlic
1/4 cup banana peppers and juice, or to taste
1 cup low-sodium beef broth
Salt and pepper, to taste
Provolone cheese
Hoagie rolls, for serving*

Step By Step
1️⃣ Load The Slow Cooker
Place the chuck roast in the slow cooker. Add the Italian seasoning, onion powder, garlic powder, minced garlic, banana peppers and juice, beef broth, salt, and pepper.
2️⃣ Let It Cook
Cover and cook on LOW for 6–8 hours or HIGH for 4–5 hours. The original recipe specifies cooking until the internal temperature reaches 145°F.
3️⃣ Shred The Beef
Remove the roast from the slow cooker and shred.
4️⃣ Build The Hoagies
Pile the shredded beef onto hoagie rolls and cover with provolone cheese.
5️⃣ Broil Until Bubbly
Broil on low until the cheese is bubbly and browned. Serve hot.
The Pool-Day Move
Start the slow cooker before everyone heads outside. When dinner smells like it took far more effort than it did, you’ve done August correctly.
No frantic chopping at 6 p.m. No abandoning the pool early. Just hot Italian beef, melted provolone, and a very good excuse to stay in your swimsuit a little longer.
