Ingredients

  1. 1 lb ground beef

  2. 1 (15 oz) package mirepoix (or about 1 cup chopped carrots, 1 cup diced celery, and 1 medium onion, diced)

  3. 1 tbsp olive oil

  4. 2 tbsp butter

  5. ¼ cup all-purpose flour

  6. 3½ cups chicken broth

  7. 4 cups diced potatoes

  8. 1½ cups milk

  9. ½ cup sour cream

  10. 8 oz block cheddar cheese, shredded or cubed

  11. 2 tsp salt

  12. 1 tsp black pepper

  13. 1 tsp garlic powder

  14. 1 tbsp Italian seasoning

  15. ¼ cup chopped parsley

  16. 1–2 pickles, chopped, for serving

Step By Step

1️⃣ Brown The Beef
  1. Heat the olive oil and butter in a large pot or Dutch oven over medium heat. Once hot, add the ground beef and cook, breaking it into crumbles as it browns.

2️⃣ Build The Flavor
  1. When the beef is mostly cooked, add the mirepoix. Season with salt, black pepper, garlic powder, and Italian seasoning. Stir and cook for about 5 minutes, until the vegetables begin to soften and everything smells delicious.

3️⃣ Make It Thick & Hearty
  1. Sprinkle the flour over the beef and vegetables. Stir continuously for 1–2 minutes, allowing the flour to coat everything and cook off its raw taste.

4️⃣ Let It Simmer
  1. Slowly pour in the chicken broth, stirring to prevent lumps. Add the diced potatoes and bring to a gentle simmer. Cook for 15–20 minutes, until the potatoes are tender and the broth has thickened slightly.

5️⃣ Bring On The Cheese
  1. Reduce the heat. Stir in the milk, followed by the sour cream, until smooth. Add the cheddar a little at a time, stirring until melted and creamy. Finish with the chopped parsley.

6️⃣ The Cheeseburger Moment
  1. Taste and adjust the seasoning. Ladle into bowls and finish with chopped pickles.

That first spoonful? Beefy, creamy, cheesy, and just tangy enough to remind you of your favorite burger.
Who knew a cheeseburger could be this good without the bun?
