Ingredients

  1. 1 lb spicy Italian sausage

  2. 1 lb ground beef or chicken

  3. 1 yellow onion, chopped

  4. 1 cup chopped carrots

  5. 1/2 cup chopped celery

  6. 2 tbsp Italian seasoning

  7. 1 cup red wine

  8. 2 28-oz cans crushed tomatoes

  9. Salt, pepper, and chili flakes

  10. 2 cups whole-milk ricotta

  11. 1 cup whole milk or cream

  12. 2 egg yolks

  13. 1 cup grated Parmesan

  14. 1 box dry lasagna noodles, broken into large pieces

  15. 2 cups grated mozzarella

  16. 1 cup grated provolone

  17. 1/2 cup chopped fresh basil or parsley

Step By Step

1️⃣ Build The Sauce
  1. Brown the sausage, beef, onion, carrots, celery, and Italian seasoning in a Dutch oven over medium heat, about 10 minutes. Deglaze with the red wine, then add the tomatoes and 1 cup water. Season with salt, pepper, and chili flakes.

2️⃣ Let It Simmer
  1. Cook the sauce for about 10 minutes, just until it begins to thicken.

3️⃣ Mix The Ricotta
  1. Heat the oven to 375°F. In a bowl, combine the ricotta, milk or cream, egg yolks, and Parmesan until creamy.

4️⃣ Layer Without Layering
  1. Stir another 1/2 cup water into the red sauce, followed by the broken noodles and half the mozzarella. Gently swirl in the ricotta mixture rather than fully combining it.

5️⃣ Bake Until Bubbling
  1. Top with the remaining mozzarella, provolone, and basil. Cover and bake for 30 minutes, then uncover and bake another 15 minutes. Rest for 10 minutes before serving.

Refrigerate it overnight, then reheat until hot all the way through. The noodles soak up a little more sauce, the cheese settles into the layers, and suddenly Monday lunch has actual prospects.
