Garlic Butter Meatball Subs on a Stick
Ingredients
For The Skewers
36 small cubes mozzarella cheese
1 tube store-bought pizza dough
12 wooden skewers
Marinara sauce, for dipping
For The Meatballs
2 lb lean ground beef
2 large eggs, lightly beaten
⅔ cup breadcrumbs
½ cup grated Parmesan cheese
1 onion, shredded
6 cloves garlic, minced
4 tsp salt
2 tsp chili flakes
2 tbsp dried oregano
2 tbsp dried basil
2 tbsp dried parsley
For The Garlic Butter
¼ cup butter, melted
4 tbsp minced garlic
2 tbsp chopped fresh parsley, or dried parsley
Step By Step
1️⃣ Heat The Oven
Preheat the oven to 375°F and line 2 baking sheets with parchment paper.
2️⃣ Mix The Meatballs
Combine the beef, eggs, breadcrumbs, Parmesan, onion, garlic, salt, chili flakes, oregano, basil, and parsley. Mix just until evenly combined—overworking the mixture can make the meatballs dense.
3️⃣ Stuff With Mozzarella
Shape the mixture into 36 meatballs. Press one cube of mozzarella into the center of each, then roll firmly to seal the cheese inside.
4️⃣ Prep The Dough
Unroll the pizza dough and cut it into 12 long strips.
5️⃣ Build The Skewers
Thread one end of a dough strip onto a skewer, followed by a meatball. Wrap the dough around the meatball and thread it back onto the skewer. Repeat with 2 more meatballs, weaving the dough between them, then secure the end of the dough on the skewer. Leave roughly ¼ inch between the meatballs and dough.
6️⃣ Make The Garlic Butter
Stir together the melted butter, garlic, and parsley.
7️⃣ Brush + Bake
Arrange the skewers on the prepared baking sheets and brush with half of the garlic butter. Bake for 20–25 minutes, until the meatballs are cooked through and the dough is golden brown.
8️⃣ Finish Glossy
Brush the hot skewers with the remaining garlic butter and finish with extra Parmesan if you like.
9️⃣ Dip + Serve
Serve warm with marinara sauce on the side for dunking.
