Grilled Citrus Salmon

🐟🍷 Fun Fact: Americans eat over a billion pounds of salmon yearly, proving few things pair better with cold wine, summer grilling, and pretending Tuesday deserves candlelight energy.

Ingredients

For The Salmon:
1 Salmon filet
1.5 tbsp Grillin With Dad All purpose rub
1.5 tbsp Grillin With Dad Maple bourbon rub
1 Orange
2 Limes

Chili Glaze Ingredients:
1/2 cup Soy sauce
1/2 cup Honey
3 tbsp Rice vinegar
1 tbsp Chili crunch
1 tbsp Ginger paste
1/2 tbsp Maple bourbon rub
1 Orange – freshly squeezed juice and zest
1 Lime – freshly squeezed juice and zest

Step By Step

1️⃣ Trim + Season The Salmon
Start by trimming the salmon filet so it cooks evenly from edge to center.

Season generously with an All Purpose rub and Maple Bourbon seasoning until the whole filet looks properly ready for grill season.

Fire Up The Grill
Preheat the grill to medium heat, around 375°F, and set it for indirect cooking.

For extra backyard magic, toss a wood chunk over the charcoal. That subtle smoke loves the citrus and sticky glaze situation that’s about to happen.

3️⃣ Build The Citrus Bed
Slice oranges and limes into rounds and lay them directly on the grill grates.

The citrus acts like a flavor-packed roasting rack, steaming the salmon gently while perfuming everything with smoky orange-lime energy.

4️⃣ Grill The Salmon
Place the seasoned salmon filet directly on top of the citrus slices.

Cook until the internal temperature reaches 135°F and the fish starts turning buttery and lightly bronzed around the edges.

5️⃣ Make The Chili Citrus Glaze
While the salmon cooks, combine soy sauce, rice vinegar, honey, fresh orange and lime juice, citrus zest, chili crunch, ginger paste, and Maple Bourbon rub in a saucepan.

Simmer low and slow until reduced by half. The glaze should look glossy, sticky, and dangerously spoonable.

6️⃣ Glaze + Finish Cooking
Brush the salmon generously with the chili citrus glaze and continue grilling until the internal temperature reaches 145°F.

The glaze will caramelize into a shiny, sweet-heat lacquer that tastes like summer dinner perfection.

7️⃣ Rest The Salmon
Remove the salmon from the grill and let it rest for about 5 minutes.

This keeps the fish juicy while the glaze settles into every smoky layer.

8️⃣ Finish + Serve
Before serving, brush the salmon with one final layer of glaze for maximum glossy drama.

Finish with fresh orange and lime zest right before it hits the table. Bright, smoky, sticky, and built for cold white wine nearby. 🍷🔥
