Korean-Inspired Gochujang Popcorn Chicken

Ingredients

  1. For The Chicken

  2. Chicken breast, cut into bite-size pieces

  3. 2 eggs

  4. Cornflakes, crushed

  5. 1 tbsp paprika

  6. 1 tbsp chili powder

  7. 1 tbsp garlic powder

  8. 1 tbsp ground ginger

  1. For The Gochujang Sauce

  2. 1½ tbsp gochujang

  3. 2 tbsp soy sauce

  4. 1 tsp rice wine vinegar

  5. 2 tsp non-alcoholic mirin

  6. 3 tbsp honey

  1. For Garnish

  2. Sesame seeds

  3. Spring onion, sliced

Step By Step

1️⃣ Prep The Chicken
  1. Cut the chicken breast into bite-size pieces.

2️⃣ Season It
  1. Toss the chicken with paprika, chili powder, garlic powder, and ground ginger until evenly coated.

3️⃣ Build The Crunch
  1. Dip each piece in beaten egg, then coat thoroughly in crushed cornflakes. Keep the cornflakes slightly chunky for a craggier crust.

4️⃣ Air Fry Until Golden
  1. Air fry at 400°F for 16 minutes, flipping halfway through, until the coating is crisp and the chicken is cooked through.

5️⃣ Make The Gochujang Glaze
  1. Combine the gochujang, soy sauce, rice wine vinegar, non-alcoholic mirin, and honey in a pan.

6️⃣ Thicken The Sauce
  1. Bring the glaze to a gentle simmer and cook until it thickens slightly and turns glossy.

7️⃣ Toss
  1. Add the cooked chicken to the glaze and toss until every piece is lacquered in sauce.

8️⃣ Finish + Serve
  1. Top with sesame seeds and sliced spring onion. Serve immediately while the coating is still crisp beneath the glaze.
