Ingredients
For the tortellini
2 tbsp olive oil
6 garlic cloves, minced
½ cup sun-dried tomatoes packed in oil, plus some of their oil
1 tsp Italian seasoning
1 pinch red pepper flakes
2 tbsp all-purpose flour
2 cups vegetable broth
20 oz cheese tortellini, about 5 cups
½ cup heavy cream
2 cups fresh spinach
1 cup grated Parmigiano-Reggiano
Kosher salt, to taste
Black pepper, to taste
Step By Step
1️⃣ Build the flavor base
Add the olive oil, minced garlic, sun-dried tomatoes with some of their oil, Italian seasoning, and red pepper flakes to a heavy-bottomed pot.
2️⃣ Cook until fragrant
Cook over medium heat for 3–4 minutes, or until the garlic is tender and fragrant.
3️⃣ Make the roux
Stir in the flour and cook for 3 minutes, stirring regularly, to form a roux.
4️⃣ Add the broth
Pour in the vegetable broth and bring the mixture to a boil. Let it cook for 3–5 minutes, until slightly thickened.
5️⃣ Cook the tortellini
Add the tortellini and a pinch of salt. Stir and cook until the tortellini is tender, following the package timing as a guide.
6️⃣ Finish the sauce
Turn off the heat. Stir in the heavy cream, Parmigiano-Reggiano, and spinach until the cheese melts and the spinach wilts.
7️⃣ Season and serve
Taste and season with salt and black pepper as needed. Serve immediately while the sauce is glossy and the tortellini is hot.
