Ingredients
Beef Filling
1 lb ground beef
1 yellow onion, diced
5 garlic cloves, minced
1 tbsp chili powder
1 tbsp cumin
2 tsp garlic powder
2 tsp paprika
1 tsp onion powder
1 tsp oregano
1 tsp salt
1 tsp black pepper
2 tbsp tomato paste
1/2 cup beef broth
Mexican Pizzas
12 taco-size flour tortillas
Neutral oil, for frying
1 can refried beans
2 to 2 1/2 cups shredded Mexican-blend cheese
4 tbsp taco sauce
4 tbsp red enchilada sauce
Diced tomatoes, for topping
Sliced green onions, for topping
Step By Step
1️⃣ Build The Beef
Cook the diced onion and garlic in a skillet until softened. Add the ground beef and cook until browned.
2️⃣ Season + Reduce
Add the chili powder, cumin, garlic powder, paprika, onion powder, oregano, salt, black pepper, tomato paste, and beef broth. Stir well and continue cooking until the liquid has reduced and the beef is deeply seasoned.
3️⃣ Crisp The Tortillas
Fry the tortillas in neutral oil until golden and crisp, seasoning lightly with salt as they come out of the pan.
4️⃣ Make The Sauce
Stir the taco sauce and red enchilada sauce together until combined.
5️⃣ Stack The Pizzas
Spread refried beans over one crispy tortilla, then layer on the seasoned beef and cheese. Top with a second tortilla, spoon over the sauce mixture, and finish with more cheese.
6️⃣ Bake + Finish
Bake at 400°F until the cheese is fully melted. Top with diced tomatoes and sliced green onions, then cut into wedges and serve.
