Classic Sausage, Egg & Cheese Breakfast Sandwiches

Ingredients

4 English muffins or sandwich buns
8 breakfast sausage patties, approximately 2 per sandwich
4 large eggs
4 slices cheddar or American cheese2 tbsp butter, divided
Salt, to taste
Black pepper, to taste
1 tbsp milk, optional, for softer scrambled eggs

Step By Step

1️⃣ Brown the sausage
Heat a skillet over medium heat. Add the sausage patties and cook for 3–4 minutes per side, until deeply browned and cooked through. Transfer them to a plate and keep warm.

2️⃣ Toast the muffins
Split the English muffins and place them cut-side down in the same skillet. Toast for 1–2 minutes, until the surfaces are golden and lightly crisp. Remove and set aside.

3️⃣ Prepare the eggs
For softer scrambled eggs, whisk the eggs with the optional milk. Melt 1 tbsp butter in the skillet, add the eggs, and season with salt and pepper. Cook gently, stirring, until just set, about 2–3 minutes. The eggs may also be fried sunny-side up, according to preference.

4️⃣ Build the sandwiches
Place 2 sausage patties on the bottom half of each English muffin. Divide the eggs among the sandwiches, then top each with a slice of cheese.

5️⃣ Melt and serve
Close each sandwich with the top half of the muffin. Let the residual heat soften the cheese for a minute, or return the assembled sandwiches to the covered skillet over low heat until the cheese melts. Serve hot.

Chef’s Notes

For a cleaner stack: Fold the scrambled eggs into four portions while they are still slightly soft.

For better melting: Add the cheese while the eggs and sausage are hot, then cover the skillet briefly.

For make-ahead breakfasts: Assemble the sandwiches, cool completely, wrap individually, and refrigerate. Reheat until the center is piping hot.
