Pepper Steak at Home

Ingredients
Pepper Steak
2 lb thin-sliced NY strip steak
1 large sweet onion, sliced
3 bell peppers, sliced
1 bunch green onions, chopped
Marinade
3 tbsp soy sauce
1 tbsp sesame oil
2 cloves garlic, grated
2 tsp fresh ginger, grated
Juice of 1 lime
2 tbsp honey
1 tbsp Worcestershire sauce
1 tsp rice vinegar
Salt, pepper, garlic powder, and onion powder, to taste
Sauce
1/2 cup beef broth
3 tbsp soy sauce
2 tsp cornstarch
1/4 cup cold water
Salt and pepper, to taste
Step By Step
1️⃣ Build The Marinade
Combine all of the marinade ingredients in a bowl and whisk until well mixed.
2️⃣ Marinate The Steak
Slice the steak into strips, add it to the marinade, and let it sit for at least 30 minutes.
3️⃣ Sear In Batches
Cook the steak in a hot pan with some beef tallow, taking care not to overcrowd the pan. Cook a few minutes per side until cooked through, then remove from the pan.
4️⃣ Cook The Peppers + Onions
Reduce the heat to medium. Add the sliced peppers and onion to the same pan and sauté for a few minutes.
5️⃣ Reduce The Sauce
Add the beef broth and soy sauce. Let the mixture reduce for 3–5 minutes.
6️⃣ Thicken It
Stir the cornstarch into the cold water to make a slurry. Once the sauce has reduced by roughly half, stir in the slurry and let the sauce thicken.
7️⃣ Bring It Together
Turn off the heat, return the steak to the pan, and toss everything together until the beef and vegetables are coated in the sauce. Serve hot.
