Step By Step
1️⃣ Start With The Bacon
Heat a Dutch oven over medium heat. Add the chopped bacon and cook until golden and crisp. Transfer to a paper towel-lined plate, leaving that beautiful rendered fat in the pot.
2️⃣ Sear The Chicken
Season the chicken thighs generously with salt and pepper. Place them skin-side down in the bacon fat and sear for approximately 5 minutes per side, until nicely golden. Remove and set aside.
3️⃣ Build The Flavor
Add the shallots and mushrooms to the same pot. Cook until softened, scraping up those flavorful browned bits. Stir in the cherry tomatoes and minced garlic and cook for another minute.
4️⃣ Bring On The Wine
Sprinkle the flour over the vegetables and stir for about 30 seconds. Add the tomato paste and red wine, stirring to combine. Let the wine reduce by roughly half. This is where the sauce starts developing its rich, savory depth.
5️⃣ Into The Braise
Pour in the chicken stock and bring everything to a gentle boil. Reduce the heat to a simmer, then stir in the reserved bacon, thyme sprigs, and carrots.
6️⃣ Let It Simmer
Nestle the chicken thighs back into the pot, skin-side up. Partially cover with the lid and simmer gently for approximately 45 minutes, until the chicken is tender and reaches an internal temperature of 165°F.
7️⃣ Finish & Serve
Taste the sauce and adjust with salt and pepper. Finish with a scattering of fresh parsley and bring the Dutch oven right to the table.
🍷 Make It A Sunday Supper
Our favorite way to serve this French-inspired feast?
Something creamy: Buttery mashed potatoes to catch every spoonful of that red wine sauce.
Something crusty: A warm French baguette. Non-negotiable if you're asking us.
Something fresh: A simple green salad with a sharp Dijon vinaigrette.
Something to pour: A glass of Pinot Noir for the grown-ups, or sparkling water with lemon.
Dim the lights, light a few candles, and linger at the table a little longer. That's what Sunday supper is all about.
