Thai Mango Salad

Ingredients
The Dressing:
3 tablespoon fresh lime juice
2 tablespoon fish sauce
1 tablespoon brown sugar packed
1 tablespoon Thai sweet chili sauce
1 red Thai chilli pepper chopped (optional for spice)
The Salad:
2 medium unripe green mango peeled
1 red bell pepper thinly sliced
1 cucumber cut into matchsticks
½ red onion thinly sliced
½ cup cilantro chopped
¼ cup mint chopped
Garnish:
¼ cup roasted peanuts crushed
fried shallots optional
Step By Step
1️⃣ Mix the dressing
In a small bowl, stir together the lime juice, fish sauce, brown sugar, sweet chili sauce, and chopped Thai chili until the sugar dissolves.
This is your sweet, salty, spicy, citrusy little lightning bolt.
2️⃣ Prep the mango
Peel the mango, then grate it into thin strips with a vegetable grater. You can also finely slice it if that’s more your speed.
Either way, you’re looking for delicate pieces that can catch all that punchy dressing.
3️⃣ Build the salad
In a large mixing bowl, combine the prepared mango, sliced bell pepper, cucumber, red onion, cilantro, and mint.
Toss everything together until it looks fresh, colorful, and extremely ready for its close-up.
4️⃣ Dress it up
Pour the dressing over the mango salad and toss gently until everything is coated, glossy, and smelling like a Thai takeout daydream.
5️⃣ Finish + serve
Top with fried shallots and crushed peanuts, then serve immediately.
