👨🍳🧑🍳 Hey, Chefs!
Some hotels earn their reputation through spectacular rooms, impeccable service, or an extraordinary view. Others have restaurants so compelling that dinner becomes the reason to travel.
Welcome to 5 Hotels: The Reservation Is the Destination, our five-part series exploring properties where the culinary experience deserves top billing.
Our first reservation takes us to the southern tip of Mexico's Baja California Peninsula, where the Pacific crashes against the cliffs of Cabo San Lucas.
At Waldorf Astoria Los Cabos Pedregal, the meal begins long before the first plate arrives.
And with two standout restaurants, a serious wine program, and private plunge pools overlooking the ocean, there's more than one good reason to stay awhile.
Cheers,

🍽️ The Reservation: El Farallón
Imagine a restaurant carved into the rocky cliffs above the Pacific. Lanterns illuminate the tables, the ocean provides the soundtrack, and the evening's menu depends on what local fishermen have brought ashore.
That's El Farallón.
The restaurant's signature is its ocean-to-table approach. Fresh seafood is presented on shaved ice, and guests choose their catch with guidance from the culinary team. An old-fashioned scale is part of the selection ritual before the kitchen takes over.
Executive Chef Gustavo Pinet's culinary program celebrates the seafood and flavors of Baja, allowing the ingredients to lead rather than hiding them beneath unnecessary flourishes.
What makes it special? The experience connects the setting, the catch, and the cooking. You're not simply ordering a seafood entrée. You're choosing from the day's selection, with the Pacific practically at your feet.
It's theatrical, certainly. But there's substance behind the scenery.
🥂 First, Champagne
Before dinner, there's the Champagne Terrace.
Suspended above the waves, the terrace features a rotating selection of approximately 20 Champagnes, with options ranging from individual pours to a guided three-Champagne flight.
For the especially indulgent, the Savor the Sea experience pairs Champagne with caviar and seafood.
This is where we would begin the evening: a glass of bubbles, the changing light over the Pacific, and absolutely no reason to rush.
It's an extravagant dinner ritual. And for an occasion-worthy evening, that's part of the point.
🦞 What We'd Order
The menu evolves with availability, which is exactly how a seafood restaurant in this setting should operate.
A few selections from the current menu have our attention:
Chocolata clams: A Baja specialty, offered with black habanero sauce and pineapple. Briny, bright, and unapologetically regional.
Kampachi sashimi: Presented with cilantro, miso, ginger, jalapeño, and yuzu emulsion. A thoughtful combination of clean seafood flavors, acidity, and heat.
Blue shrimp from Bahía Magdalena: Prepared with garlic and extra-virgin olive oil, with cocktail sauce alongside.
The local catch: Ask what's freshest, how the kitchen recommends preparing it, and which accompaniments will let the fish shine.
Our move? Keep the seafood at the center of the table and give dinner the time it deserves.
🌶️ The Other Reservation You Should Make: Don Manuel's
One extraordinary dinner can make a hotel famous. A second excellent restaurant makes a stronger argument for staying.
Don Manuel's is where the resort's culinary identity takes a different turn.
The hacienda-inspired restaurant celebrates contemporary Mexican cuisine through regional ingredients, traditional preparations, and modern technique.
The current dinner menu has some particularly interesting combinations.
Braised short rib empanadas arrive with panela cheese and green sauce.
Grilled shrimp fideo combines Ocosingo cheese with mole negro.
And pan-seared sea bass comes with beet pavé, almond, and mole rosa.
This is the side of the culinary program that has us especially interested: familiar Mexican ingredients handled with imagination, without losing their sense of place.
Then there's the wine.
The resort's new wine cellar houses approximately 3,500 bottles across more than 450 labels, spanning Old and New World producers, including a dedicated collection developed with Mexican wineries.
Both Don Manuel's and El Farallón received Wine Spectator's 2026 Best of Award of Excellence for their wine programs.
That is a pretty compelling reason to make a second dinner reservation.
🗝️ Now, About That Check-In
Here's where the hotel earns its place in the story.
Arrival at Waldorf Astoria Los Cabos Pedregal isn't exactly conventional. Guests enter through the private Dos Mares tunnel cut through Pedregal Mountain before emerging into an open-air setting overlooking the ocean.
The property completed a major transformation in 2025, refreshing its accommodations with craftsmanship, textiles, and details inspired by Mexican artisans.
Beyond the rooms, the property offers oceanfront pools, a beach club, personal concierge service, and a 12,000-square-foot spa inspired by Mexican healing traditions.
The Waldorf Astoria Spa, like the hotel itself, received a Forbes Travel Guide Five-Star distinction for 2026.
Our ideal itinerary would be wonderfully uncomplicated: settle in, spend the afternoon beside the pool, enjoy Champagne as the sun drops toward the Pacific, then take your time over dinner.
Wake up the next morning and do it all again.
🗝️ The Room Key: Stay for the View
After a long dinner overlooking the Pacific, the last thing you'll want to do is leave.
Fortunately, Waldorf Astoria Los Cabos Pedregal makes a compelling argument for staying put.
The hotel's guest rooms and suites feature private plunge pools and terraces. Inside, contemporary comforts meet Mexican craftsmanship, with natural textures, local artwork, and bathrooms designed for a proper soak.
The Room We'd Book: King Ocean View Vista with Plunge Pool. This top-floor ocean-view retreat has an expansive private terrace, a plunge pool, and a fire pit. Just the place to finish the evening with one last glass of wine.
Worth the Splurge: One-Bedroom Ocean View Suite with Plunge Pool. At approximately 1,600 square feet, this suite offers three private terraces, a separate living and dining area, and a plunge pool overlooking the ocean. There's even a pair of binoculars for whale watching.
For the Beach Lovers: One-Bedroom Beachfront Premium Suite. Private beach access, a dedicated server, a plunge pool, and an expansive lawn with a fire pit. A particularly tempting option for travelers who want to spend as much time outside as possible.
Our favorite detail? The daily delivery of fresh guacamole, chips, and Mexican beer to your room.
Because after traveling for a great meal, the next best thing might be having a little taste of Mexico arrive at your door.
Explore the rooms and suites before booking.
🍷 thebacklabel Take
Is El Farallón worth traveling for?
For a special-occasion seafood dinner in one of Cabo's most dramatic settings, absolutely worth considering.
But let's be clear: this is a serious splurge. You're paying for the setting and service alongside the seafood, and not every diner will find the value equally convincing.
For us, the stronger argument is the complete experience.
El Farallón delivers the spectacle. Don Manuel's adds culinary depth. The wine program gives enthusiasts plenty to explore. And the hotel provides a compelling reason to turn one reservation into several days.
Who should book it? Seafood lovers, couples celebrating something special, wine enthusiasts, and travelers who believe a great restaurant is an excellent excuse to check into a great hotel.
The move: Reserve El Farallón well ahead of the trip, ideally with enough daylight to enjoy the cliffside setting. Make time for Don Manuel's on another evening.
Because sometimes the smartest way to plan a hotel stay is to start with the dinner reservation.
