Ingredients

For The Salmon
  1. One full size salmon filet.

For The Ginger Scallion Sauce
  1. 4–5 scallions, thinly sliced

  2. 2–3 tbsp fresh ginger, chopped

  3. 4 garlic cloves, chopped

  4. A few Thai red chiles, thinly sliced, optional

  5. 4 tbsp avocado oil

  6. 3 tbsp soy sauce

  7. 1½ tbsp rice vinegar

  8. ½ tbsp sesame oil

  9. 1 tbsp garlic chili crisp, optional

  10. 1–2 tbsp honey

  11. 1 handful fresh cilantro, roughly chopped

Step By Step

1️⃣ Build The Sauce Base
  1. Add the sliced scallions, soy sauce, rice vinegar, sesame oil, optional chili crisp, honey, optional Thai chiles, and cilantro to a bowl.

2️⃣ Bloom The Ginger + Garlic
  1. Heat the avocado oil in a small pan. Add the ginger and garlic and cook until fragrant, about 4–5 minutes.

3️⃣ Pour It Hot
  1. Immediately pour the hot oil, ginger, and garlic over the scallion mixture. Stir everything together.

4️⃣ Finish The Salmon
  1. Bake at 400 until salmon reaches 125 degrees in the middle. As you remove the salmon from the oven it will continue cooking and reaching 145 degrees is fully cooked through.

5️⃣ Bring It To The Table
  1. Spoon the ginger-scallion sauce generously over the whole salmon fillet and serve family-style.

6️⃣
  1. For a weeknight dinner with friends, that’s really the point: one centerpiece, one sauce worth passing around, and no one—including the host—stuck in the kitchen.
