Ingredients
3–4 salmon fillets
3 tbsp olive oil, divided
Salt and black pepper, to taste
Paprika, to taste
2 tbsp butter
¼ cup heavy cream
1 round Boursin cheese, any flavor
2–3 cups baby spinach
Step By Step
1️⃣ Season the Salmon.
Rub the salmon fillets with 1 tablespoon of olive oil. Season all over with salt, pepper, and paprika.
2️⃣ Get a Good Sear.
Heat the remaining 2 tablespoons of olive oil in a skillet. Once hot, add the salmon and sear for 2–3 minutes per side, or until cooked through. Thicker fillets may need additional time. Remove from the pan and set aside.
3️⃣ Make It Creamy.
Add the butter to the same skillet. Once melted, pour in the heavy cream and add the Boursin cheese. Stir over medium-low heat until the cheese melts into a smooth, creamy sauce.
4️⃣ Add the Greens.
Stir in the baby spinach and cook until wilted. Taste and adjust the seasoning as needed.
5️⃣ Bring It Together.
Return the salmon to the skillet, spoon the creamy spinach sauce over the fillets, and gently warm everything through.
The Weeknight Move: Serve over rice or pasta to catch every last bit of that sauce. Minimal cleanup, maximum flavor.
