Ingredients
Wings
3 lbs fresh chicken wings, drums and flats
1 cup all-purpose flour
Cayenne pepper, to taste
1/2 tsp salt
1/2 tsp freshly ground black pepper
Olive oil cooking spray
Buffalo Basting Sauce
1/2 cup ketchup
1/4 cup salted butter, melted
1 packet Good Seasons Italian Salad Dressing Mix
1/4 cup packed brown sugar
1 tsp celery salt
1 1/2 tsp ground ginger
1/2 cup water
2–4 tbsp Frank’s Red
Hot Wing Sauce, to taste
To Serve
Celery sticks
Blue cheese dressing
Step By Step
1️⃣ Fire Up The Oven
Preheat oven to 400°F. Line a large baking sheet with foil and lightly coat with olive oil cooking spray.
2️⃣ Mix The Sauce
In a bowl, stir together ketchup, melted butter, Italian dressing mix, brown sugar, celery salt, ginger, water and hot sauce. Set aside.
3️⃣ Coat The Wings
If using whole wings, cut them into flats and drums, reserving tips for stock. In a large resealable bag, shake flour with cayenne, salt and pepper. Coat wings in batches and arrange in a single layer on the sheet.
4️⃣ Bake Until Golden
Bake for 45 minutes, flipping halfway through.
5️⃣ Layer On The Buffalo Glaze
Remove wings from the oven and brush generously with sauce. Return to oven for 10 minutes. Repeat two more times, turning the wings each round, for three total 10-minute basting rounds. Cook until wings reach 165°F internally.
6️⃣ Serve For The Game
Serve immediately with celery sticks and blue cheese dressing.
