One-Pan Creamy Tagliatelle

Ingredients

  1. 7 oz tagliatelle pasta

  2. 10–12 cherry tomatoes, chopped

  3. ½ red onion, sliced

  4. 1 handful fresh spinach

  5. 2 garlic cloves, diced

  6. 1 tbsp tomato paste

  7. 2 tbsp olive oil

  8. 1 tsp Italian herbs

  9. ½ cup cooking cream

  10. 1 to 1¼ cups vegetable broth, plus more as needed

  11. Salt and black pepper, to taste

  12. Grated Parmesan, for serving

Step By Step

1️⃣ Build The Pan
  1. In a large skillet, layer the tagliatelle, cherry tomatoes, red onion, spinach, and garlic.

2️⃣ Add The Sauce
  1. Drizzle with the olive oil, then add the tomato paste, Italian herbs, cream, and 1 cup vegetable broth.

3️⃣ Cover + Cook
  1. Cover and cook over medium heat for about 15 minutes, stirring a few times so the pasta cooks evenly.

4️⃣ Loosen As Needed
  1. If the pan starts looking dry before the pasta is tender, add more broth a splash at a time.

5️⃣ Finish With Parmesan
  1. Once the tagliatelle is tender and the sauce is creamy, season with salt and black pepper and finish generously with grated Parmesan.

6️⃣ Serve Hot
  1. Plate immediately while the sauce is glossy and the pasta is at its creamiest.
