Ingredients

Pasta
  1. 7 oz pasta of your choice

Roasted Vegetable Sauce
  1. 4 tomatoes

  2. 2 peppers

  3. 2 onions

  4. Garlic, to taste

  5. Rosemary, to taste

  6. Thyme, to taste

  7. Olive oil, as needed

  8. Salt, to taste

  9. Black pepper, to taste

  10. Paprika powder, to taste

  11. Oregano, to taste

  12. Chili flakes, to taste

To Finish
  1. Freshly chopped chives, optional

  2. Cheese, optional

Step By Step

1️⃣ Roast The Vegetables
  1. Wash and prep the vegetables, removing skins or seeds as needed. Add them to a roasting pan with olive oil and roast at 320°F for 40 minutes. Matt notes that you can add the seasonings before roasting or wait until afterward.

2️⃣ Cook The Pasta
  1. While the vegetables roast, cook the pasta according to the package directions.

3️⃣ Blend The Sauce
  1. Remove the roasted vegetables from the oven and blend until they become a smooth sauce.

4️⃣ Toss + Finish
  1. Add the roasted vegetable sauce to the cooked pasta. Taste and adjust the seasoning, then finish with freshly chopped chives and cheese if you like.

That’s it. A pan of roasted vegetables, a pot of pasta, and one very solid Sunday dinner.
