For The Chicken

1.5 lb boneless, skinless chicken breast
1 1/2 cups buttermilk
1/3 cup pickle juice
1/4 cup hot sauce
1 large egg
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 1/2 tsp chipotle powder
1 tsp smoked paprika
1 tsp mustard seed powder
1 tsp chicken bouillon powder
Salt and pepper, to taste

For The Dredge

1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 tsp smoked paprika
1 tsp chipotle powder
1 tsp chicken bouillon powder
1 packet sazón, optional
1/2 tsp mustard powder
Salt and pepper, to taste
A drizzle of the chicken marinade

For The Honey Chipotle Sauce

1/2 cup honey
3 tbsp blended chipotle peppers
1 tbsp unsalted butter
2 tsp apple cider vinegar
1/2 tsp garlic powder
1/4 tsp smoked paprika
Salt, to taste

For Assembly

Brioche buns
Pickles
Ranch

Step By Step

1️⃣ Prep The ChickenCut or pound the chicken into even, sandwich-sized pieces.

2️⃣ Build The MarinadeAdd the chicken to a large bowl with the buttermilk, pickle juice, hot sauce, egg, garlic powder, onion powder, chipotle powder, smoked paprika, mustard seed powder, chicken bouillon, salt, and pepper. Mix well and refrigerate for at least 3 hours, or overnight for best results.

3️⃣ Make It CraggyCombine all of the dredge ingredients. Drizzle a little chicken marinade into the flour mixture and toss with a spoon. Those little clumps are what create the extra-crispy edges.

4️⃣ Double DredgeCoat each piece of chicken thoroughly in the dredge, dip it back into the marinade, then dredge once more. Press the flour firmly onto the chicken.

5️⃣ Let It RestSet the battered chicken aside for 10–12 minutes. This helps the coating adhere before it hits the oil.

6️⃣ FryHeat frying oil to 350°F. Fry the chicken in batches until deeply golden and crisp, and until the center reaches 165°F. Transfer to a wire rack.

7️⃣ Make The SauceCombine the honey, blended chipotle peppers, butter, apple cider vinegar, garlic powder, smoked paprika, and salt in a saucepan. Cook over low heat for 2–3 minutes, stirring until smooth and glossy.

8️⃣ Glaze ItBrush or drizzle the warm honey-chipotle sauce over the freshly fried chicken.

9️⃣ Build The SandwichToast the brioche buns, add ranch and pickles, then stack on the crispy honey-chipotle chicken.

Serve immediately, preferably before somebody asks why you didn’t make a second batch.
