Ingredients
For the Chicken
1½–2 lb boneless chicken thighs, cut into bite-size pieces
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
For the Sticky Honey Sauce
½ cup honey
¼ cup soy sauce
2 tbsp sweet chili sauce
1 tbsp brown sugar
1 tbsp minced garlic
1 tsp ginger paste
1 tbsp chili crisp oil
1 tsp cornstarch
2 tbsp water
For the Noodles & Garnish
2 packs udon noodles (about 14–16 oz total)
Green onions, sliced (optional)
Sesame seeds (optional)
Extra chili flakes or chili crisp (optional)
Step By Step
1️⃣ Season & Sear
Toss the chicken with garlic powder, onion powder, paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken until deeply golden with lightly charred edges. Remove and set aside.
2️⃣ Build the Sauce
Reduce heat to medium. In the same pan, add minced garlic, ginger, honey, soy sauce, sweet chili sauce, brown sugar, and chili crisp oil. Stir and simmer for 2–3 minutes.
3️⃣ Make It Glossy
Whisk cornstarch and water together. Pour the slurry into the simmering sauce, stirring continuously until thickened, glossy, and sticky.
4️⃣ Toss the Noodles
Prepare or loosen the udon according to the package, if needed. Add to the sauce and toss until every strand is coated. If the sauce gets too thick, add a splash of noodle water.
5️⃣ Bring It All Together
Return the chicken to the pan. Toss until heated through, fully cooked to 165°F, and coated in the sticky sauce. Finish with green onions, sesame seeds, and extra chili crisp if you like a little heat.
