🍲 A Bowl Of Coconut-Lime Magic

👨‍🍳🧑‍🍳 Happy Sunday, Chefs!

All week long, we’ve been bringing Thai Takeout At Home to your kitchen.

We started with a classic, Drunken Noodles. Then came a bright Thai Mango Salad, followed by a fried rice that fully understood the assignment.

But all delicious things must eventually come to a close, and we’re ending this week’s lineup with a bowl worth lingering over.

Meet Tom Kha Soup: fragrant coconut broth layered with lemongrass, lime, mushrooms, and just enough chile heat. It’s cozy, bright, deeply sippable, and absolutely acceptable to drink straight from the bowl.

Tom Kha AKA Thai Coconut Soup

🍲 Fun Fact: Tom Kha means “boiled galangal,” the fragrant root that gives this Thai coconut soup its signature citrusy, peppery backbone.

2 cups coconut milk
2 cups vegetable or chicken broth
1 thumb chunk of galangal
3 stalks of lemongrass
1 big white onion (or 2 small white onions)
6 kaffir lime leaves
​1-2 cups​ of oyster mushrooms
5-6 thai chili
½ teaspoon salt (to taste)
​1 tsp fish sauce ​(optional)
4 tablespoons of lime juice
1 tsp chili paste (optional)
chili oil and salt to taste
small bunch of cilantro

Step By Step

1️⃣ Build the broth
In a large pot, combine the coconut milk, vegetable broth, galangal, lemongrass, kaffir lime leaves, Thai chiles, salt, and fish sauce. Bring everything to a gentle simmer and let the aromatics do their thing.

2️⃣ Add the vegetables
Stir in the onions and mushrooms, making sure everything is well coated in that fragrant coconut broth. Let simmer for 15 to 20 minutes, until the mushrooms are tender and the onions have softened.

3️⃣ Finish with brightness
Right before serving, add a generous squeeze of fresh lime juice. Taste and adjust with more fish sauce, salt, or lime as needed.

4️⃣ Dress it up
Ladle into bowls and finish with chili oil, fresh cilantro, and a little extra lime if you like things bright.

5️⃣ Make it your own
For a heartier bowl, add shrimp or chicken and simmer until cooked through. Tomatoes are also a beautiful addition if you want a little extra sweetness and color.
