Mediterranean Grilled Cheese
Mediterranean Grilled Cheese is a flavorful twist on the classic grilled cheese sandwich, featuring crumbled feta, mixed greens, sliced black olives, and a hint of harissa, all tucked inside a warm, toasted pita. This sandwich offers a delightful blend of Mediterranean flavors and fresh ingredients, perfect for a light meal or a satisfying snack.
Ingredients
- 1 pita
 - 4 oz feta
 - ½ cup mixed greens
 - ¼ cup black olives , sliced
 - 1 tbsp red onion , diced
 - harissa , to taste

Instructions
- CUT pita in half.
 - SPREAD harissa on inside of each half.
 - STUFF each pita half with feta, mixed greens, black olives and red onion.
 - HEAT pan on medium-low heat.
 - PLACE both halves in the pan.
 - FLIP when pita starts to brown and feta warms (this cheese will not melt entirely).
 - SERVE and enjoy.
