Grilled Tilapia with Corn and Cherry Tomato Salsa

This easy to make grilled Tilapia recipe is perfect for a quick dinner for two. Tilapia is a fine textured, white fish with thin filets and a sweet flavor.

  • ⅔ cup quinoa
  • 2 fillets tilapia
  • 1 cup cherry tomatoes
  • 1 corn
  • 1 shallot
  • ¼ bunch basil
  • 1 clove garlic
  • 1 lemon
  • ⅛ teaspoon white pepper

What You Need At Home

  • grill pan
  • 3 tablespoons olive oil
  • 1 cup water
  • kosher salt
  • black pepper

1. Cook Quinoa

Place quinoa, 1 cup water, and a pinch salt in a small pot over high heat. Bring to a boil, then reduce heat to low and simmer until water has evaporated and quinoa is tender, about 10 minutes. Remove pot from heat, cover, and set aside.

2. Prepare Ingredients

While quinoa cooks, rinse tilapia and pat dry with paper towel. Rinse cherry tomatoes and cut into ¼-inch slices. Remove and discard corn husk and using a sharp knife, cut off kernels. Peel shallot and mince. Rinse basil and chop leaves, discarding stems. Mince garlic. Halve lemon.

3. Cook Corn

Heat 1 tablespoon olive oil in a medium pan over medium heat. When oil is shimmering, add corn and cook until tender and golden, 8-10 minutes. Transfer to a large bowl. Add tomatoes, shallot, and basil and stir to combine.

4. Make Salsa 

In a small bowl, combine garlic, juice of 1 lemon, and 1 tablespoon olive oil. Taste and add salt and black pepper as needed. Pour dressing over salsa in bowl and stir to combine. Set aside.

5. Grill Tilapia

Season tilapia on both sides with salt and white pepper. Brush grill pan with 1 tablespoon olive oil over medium heat. When oil is shimmering, add tilapia and cook until opaque and cooked through, about 4 minutes per side.

6. Plate Tilapia

Divide quinoa evenly between 2 plates. Place tilapia on top, then spoon over corn and cherry tomato salsa. Serve.
