Jerk Fish Tacos with Honeydew Salsa

Jerk seasoning is a Jamaican spice blend rubbed on meats and fish before grilling. Sweet, spicy, and tangy, it usually contains chiles, garlic, and spices such as allspice, ginger, and cloves.

Ingredients

  • 1 Scotch bonnet chile
  • 2 cloves garlic
  • 3 scallions, divided
  • 1 cup diced honeydew melon
  • 1 red onion
  • 1 lime
  • ⅙ bunch cilantro
  • 2 fillets tilapia
  • 2 tablespoons soy sauce (gluten-free)
  • 1 teaspoon allspice, divided
  • 2 teaspoons dark brown sugar
  • 6 corn tortillas

What You Need At Home

  • aluminum foil
  • large pan
  • 2½ tablespoons vegetable oil
  • 2 teaspoons olive oil
  • kosher salt
  • black pepper

1. Prepare Ingredients

Preheat oven to 400°F. Rinse Scotch bonnet chile, halve lengthwise, and discard seeds. Mince. Mince garlic. Rinse scallions and trim and discard roots. Thinly slice white and light green parts, discarding dark greens. Cut diced honeydew into ¼-inch pieces. Peel onion and cut ½ into small dice, discarding remainder. Zest lime, then halve. Rinse cilantro and finely chop leaves, discarding stems.

2. Marinate Tilapia

Rinse tilapia and pat dry with paper towel. In a large bowl, combine Scotch bonnet chile, garlic, half of scallion, soy sauce, half of allspice, dark brown sugar, and 2 tablespoons vegetable oil. Add tilapia and turn to coat. Set aside to marinate for about 10 minutes at room temperature.

3. Make Honeydew Salsa

While tilapia marinates, in a medium bowl, combine remaining scallion, honeydew, zest and juice of 1 lime, cilantro, and 2 teaspoons olive oil. Taste and add salt and pepper as needed. Set aside.

4. Warm Tortillas

Stack tortillas and wrap in foil. Warm in oven until heated through, about 8
minutes.

5. Cook Tilapia

While tortillas warm, remove tilapia from marinade, allowing excess to drip off. Season on both sides with salt, pepper, and remaining allspice. Heat ½ tablespoon vegetable oil in a large pan over medium-high heat. When oil is shimmering, add tilapia and cook until opaque and cooked through, 2-3 minutes per side.

6. Plate Jerk Fish Tacos

Transfer tilapia to a plate and using a fork, break into 2-inch pieces. Place 3 tortillas on each of 2 plates and scatter over onion evenly. Top with tilapia. Garnish with honeydew salsa and serve.
