Margarita Cupcakes

Tequila shots? You can do better than that. We’ve got some tequila-infused, margarita cupcakes to take this party to the next level! Besides, jello shots are so two parties ago, and these babies will be much easier to eat, we promise.

Ingredients
CUPCAKES
1/4 tsp salt
1/2 cup whole milk
3 limes, juiced
FROSTING
4 tbsps tequila
1 lime, juiced
Food coloring (optional)
Slices of lime, to garnish
Instructions
PREHEAT oven to 350°F.
LINE a muffin tin with 12 cupcake liners.
MIX the flour, baking soda and salt in a medium sized bowl. Then set aside.
BEAT the butter with a hand mixer until smooth (make sure your butter is at room temperature before you begin) in a large bowl. Add in the sugar, eggs and vanilla extract and beat until well combined.
ADD in the dry ingredients slowly until fully incorporated. Then, gradually add in whole milk and lime juice, careful to not over-beat.
POUR your batter into the cupcake liners until about ¾ full.
BAKE at 350°F for about 15 - 20 minutes, or until a toothpick comes out clean. Take the cupcakes out of the muffin pan and allow to cool.
MAKE the frosting by beating butter until smooth. Gradually add in powdered sugar, until well combined. Then mix in tequila and lime juice. If you would like, slowly add in a tiny bit of food coloring, one drop at a time, until you get your desired, light-green hue.
FROST cupcakes, garnish with a slice of lime and serve!
